step by step method:

Start by making the mandarin mousse. Peel and clean the mandarins, then puree them in a saucepan. Mix in water and the other two mousse ingredients. Heat the mixture on the stove and let simmer for 2 minutes. Keep whisking. Then remove from heat and let it cool to room temperature.

Let's move on to the next layer. Mix all the cream ingredients in a large bowl until you achieve a smooth consistency. Then, crush the shortbread and blend it with the melted butter. Spread half of this shortbread mixture into 6 dessert cups, each 12 cl = 4 oz, and gently press it down.

Now, fill in half of the prepared cream, and follow by adding the mandarin mousse. Finish it with the remaining cream, then seal the cups with the left shortbread crumbs.
