First, crush the shortbread and blend it with the melted butter. Spread half of this shortbread mixture into 6 dessert cups, each 12 cl = 4 oz, and gently press down.
Next, beat the milk and instant pudding powder on the highes level for about 5 minutes until creamy. Divide the mixture into the cups and smooth the layer with a small spoon. Top with the remaining shortbread crumbles.
Now, puree the raspberries in a small saucepan and add lemon juice, powdered sugar, and cornstarch. Whisk everything together, then heat the mixture and let it simmer for one minute until it thickens. Let it cool to lukewarm, then fill the glasses almost to the top.
For the decoration, fill a piping bag fitted with a star tip with your whipped cream and pipe it onto the cups. Garnish each cup with a raspberry. Chill briefly or enjoy right away, as you prefer. 😉
